Bourgogne-vine er den mest kendte og mest udbredte specialitet i vores region.
Vinmarken strækker sig over 280 km og dækker tre af de fire departementer: Yonne, Côte d'Or og Saône et Loire. Bemærk, at Beaujolais, der tæller som Bourgogne-vin, faktisk er lavet af druesorter fra Rhône-departementet.
Bourgogne-vinmarken har omkring hundrede AOC'er, "appellations d'origine contrôlée" (officiel kvalitetscertificering), der inkluderer mere end 30 grands crus.
Vinen fra denne vinmark er hovedsageligt hvidvin (61%). Der er også en tredjedel rødvin (31%) og endelig crémant (8%). Roséproduktionen er marginal (mindre end 1% af al Bourgogne-vin).
