Vineyard & Terroir
The vineyards lie on east-facing slopes with limestone-rich soils that impart vibrant acidity and minerality. Low-yielding vines are meticulously plowed and cropped by hand, ensuring optimal fruit concentration and balance.
Winemaking
Each harvest is sorted manually at the cellar to select only the healthiest clusters. Fermentation occurs in traditional open-top vats with native yeasts, followed by gentle extraction and malolactic conversion. Aging spans 14–18 months in French oak barrels (20% new) to integrate wood and preserve fresh fruit character.
