Winemaking & Terroir

Vineyard and Soil

Les Renardes sits on steep, south-facing slopes with limestone and marl soils that impart freshness and minerality. Vines average 40 years of age, ensuring concentrated fruit.

Vinification

Hand-harvested grapes undergo 18–21 days of cold maceration, followed by indigenous yeast fermentation in open-top vats. Aging takes place in 100% French oak barrels (30% new) for 18 months.

Food Pairing & Serving

Perfect with roasted duck, game birds, braised beef, and aged cheeses. Serve at 16–18 °C in large Burgundy glasses to fully appreciate its aromatic complexity.

Ageing Potential

Enjoyable now with decanting, Les Renardes will continue to evolve gracefully over the next 15–20 years, developing tertiary notes of truffle, leather, and sous-bois.
