Dominique Laurent’s Chorey-lès-Beaune Rouge is sourced from a single lieu-dit in the northern sector of Chorey-lès-Beaune. The vines average over 30 years of age and benefit from meticulous organic farming practices. Hand-harvested at optimum ripeness and gently sorted in the winery, the grapes undergo a five- to seven-day cold maceration followed by fermentation in temperature-controlled stainless-steel vats. Malolactic fermentation takes place naturally in barrel, after which the wine matures for 12 to 14 months in 20% new French oak.On the nose, expect vibrant red berries—fresh strawberry, ripe cherry—and floral nuances of violet and rose petal. Hints of baking spice and underbrush mingle with the fruit core. The palate is medium-bodied yet remarkably layered: succulent fruit is framed by fine tannins and a bright acidity that leads to a mineral-laced, lingering finish. This wine will reward careful cellaring over the next 5–8 years, evolving further complexity and depth.
