Winemaking and Terroir
Maison Champy, founded in 1720, sources grapes from meticulously tended vineyards in Savigny-lès-Beaune. The limestone-rich soils and ideal microclimate of the Côte de Beaune impart classic Burgundy character—elegant structure, refined minerality, and expressive red fruit.
Vineyard Practices
Hand-harvested fruit ensures only the best berries are selected. Limited yields and strict sorting contribute to concentrated flavors and impeccable balance.
Cellar Techniques
After gentle destemming, fermentation takes place in stainless steel vats, followed by 12–14 months of aging in French oak barrels (25% new) to develop complexity without overpowering the delicate fruit.
Tasting Notes
Aromas of wild strawberries, cherries, and subtle underbrush lead to a medium-bodied palate with silky tannins and refreshing acidity. Flavors of red fruit compote entwine with toast and spice, culminating in a long, harmonious finish.
Food Pairing
Ideal matches include roasted poultry, veal, mushroom risotto, and soft-ripened cheeses like Brie or Camembert. Also excellent alongside charcuterie boards and seasonal vegetables.
Aging Potential
Approachable upon release, this Savigny-lès-Beaune will evolve gracefully over 5–8 years. Cellaring will enhance secondary notes of forest floor, truffle, and cigar box.
