Burgund-vinmarken har rundt hundre AOC-er, «appellations d’origine contrôlée» (offisiell kvalitetssertifisering) inkludert mer enn 30 grands crus.
Vinen fra denne vinmarken er hovedsakelig hvitvin (61 %). Det er også en tredjedel rødvin (31 %) og til slutt crémant (8 %). Roséproduksjonen er marginal (mindre enn 1 % av all Burgund-vin).
