The vineyard of les Vaillons is situated on the right bank of the Serein river, on the territory of Chablis town. The vines are planted on a clay-rich limestone soil on the Kimmeridgian strata of the Upper Jurassic. The very hard, sometimes ocher colored marls are rich with the fossil Exogira Virgula. The wines are on medium slopes (20 to 25%) and exposed South.
Grape variety 100% Chardonnay.
Manual harvest, pneumatic press, then mixed vinification (according to years, 30 to 60% in 228 liters oak casks of 1 to 10 years' age, the reminder in thermoregulated stainless steel vats). Previously, vinification was 100% in thermoregulated stainless steel vats.
Maturation The two parts are matured separately for 6 to 8 months on lees, then blended prior to bottling after 1 year's maturation.
